One of the most internationally recognised traditions of Yucatan is, without doubt, the food. It shows a combination of ingredients used by the Maya, those used by the Spanish Conquistadors and later those introduced through European influence. An abundance of condiments, spices and exotic vegetables, such as chilli Xcatic, sweet chilli, red onion, sour orange, oregano, ground pumpkin seeds, annatto and of course the famous habanero chilli, can be found in the Yucatan kitchen.
